Le modèle de service Windows n'a rien de spécial. Il crée deux fichiers de classe dans votre projet et ajoute une référence à System.ServiceProcess:

Créer une classe qui hérite de System.ServiceProcess.ServiceBase, passer outre OnStart et OnStop. Utilisez installutil pour enregistrer le service sur votre machine.
